He is considered one of the heirs of the school of the Venezuelan maestro Alirio Díaz from whom he received his most important musical studies in Rome from a young age, successively becoming his assistant in international courses for advanced guitar development and a partner in numerous duet concerts. 

He received advanced courses with internationally renowned musicians including: Manuel Barrueco, David Russell, John Duarte, Roland Dyens, Leo Brouwer, Julian Bream, Abel Carlevaro. He perfected himself in the Renaissance and Baroque executive praxis with the lutenist Hopkinson Smith and the harpsichordist Christiane Jaccottete. He also studied composition with Maestro Azio Corghi.

 Simone Onnis is considered "Italian excellence, with an artistic personality that places him outside the box and makes him a rigorous and unconventional musician". He is frequently invited to represent Italy in different prestigious halls and theatres, including the Rudolfinum (Prague), the Stedelijk Museum (Amsterdam), the Stadttheater (Basel), the Wolfsburg Castle, the Assembly Hall - AUB American University of Beirut (Lebanon), the Minsk National Theatre (Belarus), the Austrian Hospice (Jerusalem), the Sheung Wan Civic Centre (Hong Kong). In 2010 he made his debut at the prestigious Carnegie Hall in New York. 

He has collaborated with numerous symphony orchestras and chamber orchestras, including the Weber Symphony Orchestra, the Stuttgart Chamber Orchestra, the Arc Quartet of Scala theatre in Milan, and with exceptional artists such as Alirio Diaz, Angelo Romero, Giuseppe Anedda, Charbel Rouhna, Paola Gassman. For 25 years he has formed a stable duo with the guitarist Luigi Puddu (Duo Gioacchino Rossini). 

He has taught in many masterclasses at Universities and Conservatories, among which stand out: Syria (Damascus High High Institute of Music), Israel (Beit – Musica Conservatory), Lebanon (at the Lebanon Conservatoire National Superieur de Musique of Beirut and the AUT – American University of Technology of Byblos). 

He is the dedicatee of new works for guitar by prestigious contemporary Italian composers including Giacomo Manzoni, Azio Corghi, Adriano Guarnieri. These works contribute to enriching the repertoire of contemporary music for guitar. 

He is artistic director of the Aliario Diaz International Guitar Festival and the Mauro Giuliani International Guitar Festival. 

He plays with the guitar of the Italian luthier Michele Greci and as "RC Strings Artist" he is an ambassador of RC Strings worldwide.
